Another fried plantain side dish. This time, you let the plantain ripen until they turn black before frying, which makes them sweet. Goes well with rice-based dishes.

MADUROS
Time: 5 minutes
Makes about 5-6 servings per plantain
Ingredients: Ripe Plantain(s)
Prep: Allow the plantain(s) to ripen fully, basically until it turns black. It is best to buy a yellow plantain, then leave in a bag for 5-7 days, checking each day.
Directions:
- Peel the plantain and cut at an angle for longer slices.
- Fry them in a pan with at least an inch of oil (or a deep fryer) until they turn golden brown, about 2-3 minutes.
- Dry on absorbent paper towel
- Serve immediately
Notes & Comments:
- I like cooking them until they edges burn slightly and get crispy, it's my favorite part.

PLATANOS MADUROS FRITOS
Pele el platano y cortelo en lascas largas. Frialas en la sarten con aproximadaments una pulgada de grasa caliente, haste que se doren bien. Escurralos sobre un papel absorbente.
