Tostones/Chatinos (Fried Green or Yellow Platains)

 
Tostones are a popular side dish that goes well with almost any main meal. It's a great way to serve green plantains. These are fried, so make sure to be very cautious when working around hot oil.

These can be made with yellow plantains as well, but because they are sweeter, the brown faster, so cooking time is shorter.

GREEN PLANTIAN TOSTONES/CHATINOS

Time: about 15-20 minutes
Makes about 5-6 tostones per plantain

Ingredients:

Green plantains (unripe plantains)
Frying oil (canola, vegetable, etc.)
Salt


Prep:

  • Add oil to pot and heat to 
  • Cut plantains into 1-inch chunks


Directions:

  • Carefully place plantain chunks into hot oil and allow to fry until they turn a golden color, about 
  • Remove and place on drying rack over paper towel and allow to cool for a minute.
  • Using a flat surface, like the bottom of a cup, a cutting board, or a tostonera, smash the plantains to a flat disk.
  • Place the plantains back in the oil, this time at , to fry for another 
  • Place on cooling rack and sprinkle with salt immediately.
  • Best served straight away.

 

YELLOW PLANTAIN TOSTONES/CHATINOS


        These are made the same as with green plantains, except that they require less time to fry.


Notes & Comments:

  • Traditional cuban tostones are made with green plantains. The more yellow they are, the ripper and sweeter they are. Because of the higher sugar content, they brown faster. They aren't bad, but I prefer them not being sweet at all.
  • After smashing the plantians, this is a good step to stop if you would like freeze to serve later. Once ready to serve, defrost then fry.
  • A tostonera is a wooden tool used for making tostones. They're pretty cheap, so if you find one and plan to make tostones often, get one!

TOSTONES O CHATINOS DE PLATANO VERDE

        Pele el plátano y córtelo en trozos de aproximadamente una pulgada. Fríalos a 365°F durante unos cinco minutos o hasta que empiecen a dorarse. Escúrralos sobre papel absorbente. Aplástelos y vuélvalos a freír a 385°F aproximadamente 3 minutos mas. Escúrralos sobre papel absorbente y polvoréelos con sal.
        Para que los chatinos queden mas blandos, después de freírlos la primera vez, remójelos unos minutos en agua con sal. Escúrralos y luego vuélvalos a freir.

TOSTONES O CHATINOS DE PLATANO PINTON

        Se hacen igual que los de plátano verde solo que generalmente requieren menos tiempo al freírse.
