Huevos con Jamon a la Crema


This dish is kind of like an deconstructed croquetta. It's basically a ham béchamel sandwich with shredded egg yolks. I found this recipe a little bizarre at first, but it turned out to actually taste good! Give it a try if you have left over ham and eggs!

Huevos con Jamon a la Crema

Time: approx. 30 minutes
Makes 4 servings

Ingredients:
4 hardboiled eggs
¼ lb. sweet ham
4 tbsp. butter
1½ cup milk
1 tsp. salt
1 tsp. flour
⅛ tsp. ground pepper
4 slices of toasted bread


Prep:
  • Cut the hardboiled eggs in half and remove the yolks. Set the yolks aside
  • Dice the egg whites into small pieces
  • In a blender, blend together the milk, flour, salt, and pepper
  • Grind the ham in a food processor

Directions:
  • In a pan, melt the butter over low heat
  • Add the milk mixture and stir constantly until it begins to thicken
  • Stir in the diced egg whites and ground ham, then remove from heat
  • Evenly divide this mixture over each slice of toasted bread.
  • Powder with the hardboiled egg yolks passed through a sieve.
You may use 1 small call of deviled him instead of the ground ham if you prefer.

HUEVOS CON JAMÓN A LA CREMA

4 huevos duros
¼ lb. de jamón dulce
4 cdas. mantequilla
1½ taza de leche
1 cdta. de sal
1 cdta. de harina
⅛ cdta. de pimienta
4 tostadas

        Corte los huevos duros a la mitad y separe la yema de las claras. Pique las claras en pedacitos. Derrita la mantequilla, añádale la leche osterizada con la harina, sal y pimienta. Cocínelo a fuego lento revolviendo constantemente hasta que espese. Añádale a esta crema las claras picaditas y el jamón molido. Vierta esta crema sobre las tostadas y polvoréelas con las yemas de huevo pasándola por un colador. Da 4 raciones.
        En lugar de jamón dulce, puede utilizar 1 latica de jamón de diablo.
