Ensalada de Papas (Potato Salad)


It's hard to go wrong with potato salad. This version has lot of textures: the tenderness of the potatoes, the crunch from the onions and green peppers, and the creaminess from the cream cheese and mayo. Great and easy side dish to whip up for any occasion!

Potato Salad

Time: approx. 2 hours total
Makes about 6 servings

Ingredients:
2 lbs. potatoes
1 tsp. salt
¼ cup de diced onion
¼ cup diced green peppers
4 oz. cream cheese
½ cup mayonnaise

Prep:
  • Dice the onion and green pepper and measure out 1/4 cup of each. Set aside.
  • Peel and cube the potatoes in ½-in slices.

Directions:
  • In a pot, add the cubed potatoes, salt, and enough water to cover them.
  • Bring to a boil over high heat and cook for approximately 10-15 minutes, or until tender (a fork should pierce them easily)
  • Strain the potatoes, then mix them together with the diced onions and peppers in bowl. Cover the bowl and place in the refrigerator for one hour.
  • Beat the cream cheese and mayonnaise unit well incorporated, then mix into the potatoes. Serve cold over lettuce leaves.

Notes & Comments:
  • Using waxy potatoes like Yukon Gold or red potatoes is highly recommended for potato salad. Starchy potatoes like Russet or Idaho potatoes are okay to used, but they can fall apart/crumble easily and are much better for dishes like mashed potatoes.
  • If you prefer, you can replace the cream cheese with an additional 1/2 cup mayonnaise if you want a more tangy potato salad.
  • The onions and peppers are optional as well. But they add a nice crunch and give the dish more textures.
  • You can use red pepper or a mix or red and green in you prefer.
  • Peeling the potatoes is optional, some people like the skin.

Receta Original:

2 lbs. de papas
1 cdta. de sal
¼ taza de cebolla picadita
¼ taza de ají picadito
2 quesos crema de 2 oz.
½ taza mayonesa

Cocine las papas cortadas en trocitos en agua hirviendo con la sal. Cuando estén blandas, escúrralas y añádales la cebolla y el ají. Póngalas en una cacerola con tapa y guárdelas en el refrigerador durante una hora. Bata el queso crema con la mayonesa y añádalo a las papas. Sírvala en hojas de lechuga. Da 6 raciones.
